Last of the Summer Recipes

My go-to recipe books and the foods I enjoy cooking in my own home. No meat, just lots of fresh fruit, vegetables and a bit of fish – just the way we like it!

My absolute favourite book for healthy, original and flavoursome vegetarian food is Yottam Ottolenghi’s book ‘Plenty’ (currently £16.82 on Amazon). Everything in this book looks and tastes amazing! If you have ever visited and eaten in one of his restaurants, you will know exactly what I mean! It also has an extremely tactile, squishy cover (not that that should sway you but I thought I’d share!).

I made Ottolenghi’s Green bean salad with mustard seeds and tarragon over the weekend and it was simply delicious. I must confess, I’m not really a ‘salad person’ so I’m always keen to find interesting recipes that give salads a bit more substance and flavour. This is definitely a good one…

I also made the Pasta and fried courgette salad which is tasty, easy to make and suitable for both the children and adults.

Lastly, another Yotam Ottolenghi salad favourite of mine is this Tomato Party recipe. The colours alone make this a real stand-out dish.

When it comes to BBQ’ing we always (and I mean always) reach out for Levi Root’s ‘Grill it with Levi’ recipe book (currently £16.43 Amazon). When it comes to flavour, look no further!

A favourite of ours is this Sunshine Tuna recipe; tuna steaks marinated with orange juice, fresh coriander, chilli, garlic and then barbecued – pure summer on a plate! This marinade works for several types of fish. Matt particularly likes it on fresh prawns, but salmon also goes well.

If you like flavour and enjoy fish as much as we do, I would highly recommend you giving these next two recipes a go. The first is reference to East Asian cuisine and is by Lorraine Pacale in her book ‘Lorraine Pascales’s Fast, Fresh and Easy Food’ (currently £14.99 on Amazon). It is Honey soy-glazed salmon with sesame & ginger noodles & stir-fried boy choi. So good!

Next up is Jamaican by origin and is from my trusted Levi book – Jamaican coconut-baked fish parcels. Served with wild rice, this makes for a winning meal!

I have recently purchased two new recipe books which not only have amazing recipes inside, but also have gorgeous covers that look wonderful when propped up on the kitchen side. ‘The Flexible Pescatarian’ by Jo Pratt (currently £10.86 on Amazon) has a great selection of pescatarian recipes and also includes top tips on how to prepare fish – great if you are slightly unsure of some of the techniques.

My next book is ‘The First Mess Cookbook’ by Laura Wright (currently £19.99 on Amazon). This is a beautiful plant-based book that shares healthy recipes, full of colour and vibrancy.

If you are looking for some tasty little vegan appitizers I would recommend Laura’s Avocado Tartare served on crackers!

    I love this thank you, I am embarrassed to say that I have had ‘Plenty’ sitting on the shelf gathering dust as it just seemed a bit intimidating, I am going to give your suggestions a try!
